Irish Moss Pudding

4g Irish Moss

850ml Milk

1/2 Teaspoon of Vanilla essence

50g Sugar

1 egg, separated

Cooking Instruction

Soak the Irish Moss for 10 minutes in water, remove and put in a saucepan. Add the milk and the Vanilla essence

Bring to the boil, partly cover and gently simmer for 15 minutes

Put the Irish Moss through a strainer into a mixing bowl

Rub the jelly through the mixture or liquidise in a food processor then beat into the milk adding the sugar and egg yolk

Whisk the egg white until it becomes stiff and fold gently into the mixture.

Transfer to a serving bowl

Serve  chilled with fruit compote or a sweet sauce
